La Pavlova è un delicatissimo dolce di origine australiana, inventato dal pasticcere Berth Sachse nel 1926, in onore della ballerina russa Anna Pavlova, la più grande a quei tempi.
Costituita da una meringa ricoperta di panna montata, viene poi guarnita con frutta fresca a piacere.
Consiglio di cimentarsi con questo dolce in un momento di calma, così che possiate dedicarvi alla meringa che richiede una particolare attenzione, affinchè sia croccante fuori e morbida dentro.

Pavlova is a really light Aussie dessert, created by a baker, Berth Sachse, in 1926, for the Russian dancer Anna Pavlova, who was the most famous one at the time.
Made by a meringue covered in whipped cream, it’s then garnished with fresh fruit.
I’d recommend to make this cake while you have a nice amount of time, so that you can dedicate yourself to the meringue – which is bit time-consuming – so that it can be crunchy on the outside and soft on the inside. 

Pavlova: ingredienti

Per la meringa: 6 albumi (uova medie)
250 gr zucchero finissimo
1 cucchiaio aceto di mele
1 pizzico sale
15 gr maizena
1 cucchiaino estratto vaniglia
4 gr lievito in polvere

Per guarnire: 300 ml panna fresca da montare
30 gr zucchero
frutta fresca a piacere (kiwi, fragole, lamponi, …)

Procedimento

Preriscaldare il forno a 250°. Mettere in una planetaria (o in una ciotola utilizzando fruste elettriche) gli albumi e montarli a neve con un pizzico di sale, unire poi il lievito e l’estratto di vaniglia.
Amalgamare zucchero e maizena e aggiungere poco alla volta al composto di albumi sempre con le fruste in azione. Aggiungere infine l’aceto ed ottenere un composto cremoso e compatto.
Foderare una teglia da forno con carta forno e creare con il composto un disco spesso con i bordi rialzati. Abbassare la temperatura del forno a 120° e cuocere la meringa per circa 1 ora e mezza in forno statico. Spegnere il forno, aprire leggermente lo sportello e lasciar raffreddare completamente la meringa ottenuta. Dovrà essere dorata in superficie.
Nel frattempo tagliare la frutta e fettine e montare a neve la panna con lo zucchero.
Una volta raffreddata la meringa, ricoprirla di panna e guarnire con la frutta.

Pavlova: ingredients

For the meringue: 6 egg whites (medium eggs)
250 gr of sugar
1 tablespoon of apple vinegar
1 pinch of salt
15 gr of corn flour
1 teaspoon of vanilla extract
4 gr of baking powder

To decorate: 300 ml of fresh heavy cream to whip
30 gr of sugar
fresh fruit (kiwis, strawberries, raspberries, …)

How to make it

Preheat you oven at 250°C. Prepare a bowl and, using an electric beater, whisk up the egg whites with the salt; then add the baking powder and the vanilla extract. 
Blend the sugar and corn flour together, then add the egg whites mixture a little at a time (keep whisking). Eventually add the vinegar; you should have a creamy and compact mixture. 
Line a baking tray with some parchment paper and then pour the mixture into it, making sure there’s some on the sides. Turn the temperature to 120°C and cook the meringue for 1 hour and a half in a static oven. Then turn off the oven, open the door just a little bit and let the meringue cool down. It should be golden brown on the top. 
In the meantime, cut the fruit and whip up the heavy cream together with the sugar. 
Once the meringue is completely cool, cover it in whipped cream and garnish with some fruit.
