Impazza l’atmosfera carnevalesca e si comincia a pensare a quali dolcetti preparare per queste feste. Se volete uscire dalla monotonia e preparare qualcosa di diverso quest’anno, provate i Papos de anjo, direttamente da Rio de Janeiro, che vengono mangiati sì in Brasile durante il carnevale, ma in realtà hanno origini portoghesi. La leggenda narra che questi morbidi dolcetti siano nati grazie alla maestria di suore di clausura ed il loro nome ha un non so che di religioso, infatti. Papos de anjo vuol dire letteralmente “pancine di angeli”.

If you want to get out of your comfort zone and cook something different, try the Papos de anjo, directly from Rio de Janeiro. People eat them in Brazil during Mardi Gras, but they were actually born in Portugal. According to the legend, these soft treats were first made by cloistered nuns, and their name has something spiritual in itself, indeed. Papos de anjo literally mean “angels’ tummies”.

Ingredienti

9 tuorli
1 albume
4 tazze zucchero
4 tazze acqua
essenza vaniglia 1 cucchiaino
codette colorate o zuccherini

Procedimento

Accendere il forno a 170° e imburrare uno stampo da muffin. Lavorare i tuorli finché diventano spumosi, aggiungere delicatamente l’albume montato a neve. Continuare a mescolare, fino ad ottenere una soffice mousse. Versare il composto nelle formine imburrate, riempiendole per i 3/4. Infornare subito per 20-25 minuti, finché i dolcetti saranno dorati.
Sfornate subito, aiutandosi con una spatola, poi praticare su ognuno 3 o 4 fori.
Preparare quindi lo sciroppo, facendo sciogliere lo zucchero nell’acqua bollente ed aggiungendo l’estratto di vaniglia. Sistemare i papos in una terrina ed irrorare completamente con il liquido bollente. Lasciare in frigo tutta la notte e cospargere con zuccherini prima di servire.

1 egg white
4 cups of sugar
4 cups of water
1 teaspoon of vanilla extract

how to make them

Preheat your oven at 170° C and butter your muffin tins. Work with the egg yolks until they’re fluffy, then carefully add the whites (which you need to whisk up beforehand). Keep mixing until you achieve a nice, soft mousse consistency. Pour the mixture into the tins 3/4 of the way. Put them in the oven and cook for 20-25 minutes, until they are golden brown.
Take them out of the tray (use a spatula if you need any help) and do 3 or 4 holes onto it.
Then make the syrup: melt the sugar with some boiling water, adding the vanilla extract. Put the papos onto another tray and drench them with the syrup. Leave them in the fridge overnight and cover them with sprinkles before you serve them.
