La mississippi mud cake è un dolce tipico degli Stati Uniti del Sud, come ricorda il suo nome. La caratteristica principale del dolce sta proprio nella parola inglese mud, ovvero fango: la torta risulterà croccante grazie alla sua crosta esterna ma molto molto morbida internamente con il suo cuore fondente. Proprio per questo va maneggiata con molta cura, quindi sformatela quando si sarà raffreddata per evitare crepe.

Mississippi Mud Cake is a typical cake coming from the Southern US, as its name says. Its main feature is relatable to the word mud: the cake is crunchy on the outside, but soft and fondant on the inside. For this reason, you need to be careful when serving it; so make sure you take it out of the oven only when it’s completely cool, otherwise it will crack.

Ingredienti

-Per la base biscotto
225 g di biscotti Digestive al cioccolato
60 g di burro
60 g cacao amaro
-Per il ripieno
180 g di cioccolato fondente
180 g di burro
4 uova grandi
90 g di zucchero di canna
90g di zucchero semolato
180 ml di panna fresca
1 tazzina di caffe forte
-Per il pudding al cioccolato
80 gr di zucchero
30 gr di cacao
15 gr di amido di mais
un pizzico di sale
2 tuorli
300 gr di latte
25 gr di burro
Vaniglia
50 gr di cioccolato fondente
-Per decorare
200g di panna montata
2 cucchiaia di zucchero a velo

Procedimento

Per la base:
Tritare finemente i biscotti nel mixer, aggiungere 2 cucchiai di cacao, fondere il burro e versare tutto in una ciotola, mescolare fino a quando gli ingredienti si saranno perfettamente amalgamati. Preparare uno stampo da torta rotondo da 24 cm di diametro foderando il fondo e i lati con strisce di carta forno. Disporre il composto sulla base della tortiera livellando bene con il dorso di un cucchiaio e lasciar riposare in frigorifero.
Per il ripieno:
Tagliare il burro a tocchetti e fondere insieme al cioccolato fondente finemente tritato in un contenitore a bagnomaria mescolando bene con un cucchiaio di legno. Nel frattempo con lo sbattitore elettrico montare le uova insieme allo zucchero di canna e lo zucchero semolato in una capiente ciotola fino ad ottenere un composto chiaro, denso e spumoso. Incorporare quindi la panna non montata, la tazzina di caffè e il cioccolato fuso già intiepidito, sempre rimestando con cura.
Versare il ripieno sulla base di biscotti, livellare accuratamente scuotendo un po’ la tortiera e cuocere nel forno già caldo a 180° per circa 45/50 minuti.
Trascorso questo tempo sulla superficie della torta si formerà una crosticina e all’interno si sarà solidificata. Lasciare raffreddare nello stampo e trasferire con tutto lo stampo nel frigo.
Per il pudding:
In una casseruola mescolare lo zucchero, il cacao, l’amido di mais e il sale. Aggiungere i tuorli e mescolare con una frusta, quindi aggiungere il latte finchè il composto sarà denso.
Mettere sul fuoco e portare ad ebollizione sempre mescolando. Far bollire per 30 secondi poi versate il budino in una ciotola ed aggiungere il burro, il cioccolato e la vaniglia, incorporando tutti gli ingredienti. Coprire con la pellicola e lasciare raffreddare in frigo per qualche ora, poi spalmare sulla torta.
Per decorare montare la panna con lo zucchero, fare uno strato che copra la torta e rimettere in frigo fino al momento di servire.

225 gr of chocolate Digestive cookies

180 gr of dark chocolate
180 gr of butter
4 big eggs
90 gr of brown sugar
90 gr of granulated sugar
180 ml of heavy cream
a small cup of dark coffee
– For the chocolate pudding
80 gr of sugar
30 gr of cocoa powder
15 gr of cornflour
a pinch of salt
2 tuorli
300 gr of milk
25 gr of butter
Vanilla extract
50 gr of dark chocolate
– To decorate
200 gr of whipped cream
2 tablespoon of powder sugar

How to make it

For the base:
Thinly chop up the cookies in the mixer, add 2 tablespoon of cocoa powder, melt the butter and pour everything into a bowl; mix everything until it’s well combined. Prepare a 24cm wide cake mould, line it with parchment paper, and pour the mixture into it, making sure there are no bubbles. Let it cool in the fridge.
For the filling:
Cut the butter into little squares and melt it together with the dark chocolate, mixing well with a wooden spoon. In the meantime, with an electric whisk, combine the eggs with the brown and granulated sugar, until you have a white-ish, thick and foamy mixture. Then incorporate the heavy cream, coffee and warm, melted chocolate, and keep mixing. 
Pour everything onto the cookie base, carefully flatten it and let it cook in the oven at 180° C for about 45/50 minutes.
You’ll notice there will be a thin crusty layer on top, will the inside will be consolidated; let the cake cool in the mould and then transfer everything in the fridge. 
For the pudding:
In a casserole, mix together the sugar, cocoa powder, cornflour and salt. Add the egg yolks and whisk everything up, later adding the milk until the mixture is thick. 
Put the soucepan on the stove and bring it up to a boil: let it boil for 30 seconds, then pour the pudding into a bowl, add the butter, chocolate and vanilla, mixing everything really well. Cover it with some wrapping paper and let it cool in the fridge for a few hours; last but not least, spread it over the cake. 
To decorate, whip up the heavy cream with some powder sugar; use it to make a thick layer on top of the cake and put it in the fridge until you serve it.
